Gecko is of course more standards compliant than Trident, so either:
a) Outlook webmail is supposed to look like that; Netscape/Firefox is actually rendering it correctly, or
b) Microsoft have designed it so that it looks better in IE than other browsers.
Take your pick, they're all solid options.
If you must use Trident, have a look at the IETab extension for Firefox.
I'm not dissin' the entire product. I like the spell check feature, and the view passwords feature, for starters.
I miss the widgets, especially email and stock ticker. Are those coming back? What about some new skins? Gimme some skins, bro!
